So earlier this week I had a bit of a mare when it came to tea time. After planning to have steak for tea and forgetting to take it out of the freezer to defrost before leaving for work, I had to improvise with what I had in my cupboards to make something else. I came across some mini pizza bases that I bought a while ago and decided to conjure up something tasty using some fresh ingredients from my fridge.
The pizza bases I used are from a popular Italian food brand called Napolina and only take 10 minutes to make in the oven so they’re great for a quick fix. I love BBQ based pizzas and they’re usually pretty hard to come by so I decided to spread some BBQ sauce on the base of each of my four pizza bases before topping them with diced chicken, chorizo and grated cheese.
The pizza bases were lovely and crisp and didn’t leave me feeling bloated and greasy like most other pizzas do! One mini pizza was just enough to fill me for tea and they are easy enough to reheat in the microwave for lunch the following day.
These mini pizzas were so fun to make and were really easy to do. I think they would be perfect if you are planning to host a casual dinner around your house and are unsure what type of food your guests like to eat. Simply put out some ingredients on the kitchen side and let your guests help themselves and make their own homemade pizza creations!
