This year I promised myself I would eat better and step out of my comfort zone by trying some new foods. Since moving into my own house I’ve come to realise that my cooking skills aren’t great and are in some desperate need of improvement. Since embarking on my journey to try more foods and different recipes, I’ve discovered a love for sweet potato.
Crispy Sweet Potato Fries
The photograph below taken after my first attempt and whilst they tasted ok, I prefer them more crispy. For months I’ve been trying to master how to make my sweet potato fries crispy like in the restaurants. There have been a few occasions where they have taken AGES to cook in the oven and a few where they have just frazzled to a worthless size. It was only last month that my friend Matt shared his method with me and the secret is to soak your potatoes for an hour, dry them off and sprinkle them with cornflour! Sweet Potato Chocolate Brownie
I know what you’re thinking, but hear me out! I found this recipe from Lauren who blogs over at Britton Loves and decided to try it as a healthy alternative to one of my favourite desserts. The sweet potatoes are a great substitute for butter and eggs whilst the dates help to naturally sweeten the whole thing. I was a bit wary at first but the end result was amazing – a rich, indulgent brownie that tastes delicious!
Sweet Potato Shepherds Pie
When I was scouring Pinterest to give me some inspiration for my tea one night, I came across a modern version of a hearty classic – Shepherds Pie. The recipe is pretty similar to the traditional version, all you do is switch your regular mashed potato for sweet potato. The outcome was really tasty!
